Shoo-fly Cake - 2 recipes

Mix together:
1 cup molasses
1 teaspoon baking soda
2 cups hot water


Mix together:
4 cups flour
3/4 cup shortening
2 cups brown sugar
1 teaspoon salt


Set aside 1 cup of crumbs.
Add liquid to the remaining crumbs.
Mix, pour into loaf pan and sprinkle with the cup of crumbs.
Bake at 350 degrees for 35-40 minutes

Second recipe:
 
4 cups flour

2 cups packed light brown sugar
1 cup shortening
1/4 teaspoon cinnamon
1 (16 ounce) bottle light molasses
1 tablespoon baking soda
2 cups boiling water

Combine flour and brown sugar in a bowl.
Cut in the shortening until mixture resembles coarse crumbs.
Reserve 1 cup of the crumbs.
Stir in the cinnamon and molasses.

Dissolve baking soda in 1/4 cup boiling water.
Stir the remaining boiling water into the molasses mixture gradually.
Stir in the baking soda mixture.

Pour into a greased 9x13 inch cake pan.
Sprinkle with the reserved crumbs.
Bake at 375 degrees for 45 minutes.
