Black Chocolate Cake
Black Chocolate Cake
Prep Time: 40 min
Yield: 8 servings
Ingredients:
2 cups sugar
2 cups sifted flour
1 cup cocoa
1 Tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2/3 cup olive oil
2 cups boiling water
2 eggs
1 cup fresh raspberries or strawberries, sliced
1 bowl Cool Whip, thawed
Preparation:
Mix dry ingredients. Add vanilla and oil. Slowly pour in boiling water and beat until well mixed.
Add eggs, one at a time, beating well after each addition.
Pour batter into cupcakes or rectangular glass dish.
Bake at 350 degrees for 30 minutes or until toothpick inserted comes out clean.
Cool on rack.
Serve with fresh berries and Cool Whip.
