New York Cheesecake

NY Cheesecake
Prepared by Executive Pastry Chef at THE HOTEL HERSHEY


3 pounds cream cheese
10 ounces sugar
6 eggs
2 yolks
1 cup cream


· Whip cream cheese and sugar until smooth in a mixing bowl
· Add eggs slowly to the batch
· Scrape down the sides of bowl, mix till smooth
· Add the heavy cream till smooth
· Bake at 325 degrees in a water bath for 40-45 minutes
· Chill and serve

Yield: 19”cake
